Whipped Turnip Casserole

Cook turnip with 1/4 cup brown sugar. Mash while hot.

Add margarine, sugar, salt and pepper. Beat with mixer until blended. Cool. Add eggs, one at a time, beat until fluffy. Stir in bread crumbs and lemon juice. Pour into casserole dish. (1 1/2 quart). Use PAM on dish.

Cook uncovered at 375 degrees F. for 35 - 40 minutes approximately.

This may be made the day before cooking. Store in the fridge and remove about 1 1/2 hours before cooking. This is to let it sit at room temperature so the casserole dish will not break from the heat of the oven.

Note: You can double this recipe and then freeze some. I have done this on occasion and my sister always does this.
